The grapes are harvested at two separate times due to the different ripening times, Merlot being an early variety and Oseleta a late variety.
Vinification The grapes are harvested at two separate times due to different ripening times. Vinification takes place in steel tanks at a controlled temperature below 25°-
26° C after maceration in contact with the skins. The fermentation lasts about ten days at the same time as the spontaneous malolactic fermentation, without induction.
Refining In French oak barriques and tonneaux and 7.5 hectolitre barrels for two years, with different types of wood. Subsequently, the wine is placed in bottles placed horizontally for at least 6 months to complete the formation of the bouquet.
