Vinification | The grapes are harvested at two separate times due to different ripening times. Vinification takes place in steel tanks at a controlled temperature below 25°- 26° C after maceration in contact with the skins. The fermentation lasts about ten days at the same time as the spontaneous malolactic fermentation, without induction. |
Refining | In French oak barriques and tonneaux and 7.5 hectolitre barrels for two years, with different types of wood. Subsequently, the wine is placed in bottles placed horizontally for at least 6 months to complete the formation of the bouquet. |
